Recipe for Breakfast Pancakes with Berries

Looking for a dairy and gluten free breakfast recipe that satisfies your sweet tooth? Try these delicious pancakes!


3 organic eggs
1 cup almond meal or flaxseed
25 ml almond milk
1 tbsp chia seeds
half a mashed-up banana
1 tsp cinnamon
Optional: Protein powder 
Coconut oil (for frying)
Frozen berries (fresh if available!)
Coco yoghurt
Maple syrup
Shredded coconut


1.Mix the eggs, almond meal, almond milk, chia seeds, banana, (protein powder) and cinnamon in a bowl until smooth.

2.Heat up some coconut oil in a frying pan on a medium to high heat, use enough oil to cover the pan.

3.Once hot, pour a ladle of the batter in the pan and swirl the batter around until even.

4.Cook for approx. 2 minutes, or until golden brown, then flip over to cook the other side.

In the meantime, soften up the frozen berries on a low to medium heat in a separate pan, until all berries are defrosted.

Serve the pancakes with a dollop of coconut yoghurt, shredded coconut and berries. Poor over a bit of maple syrup for some extra sweetness. Enjoy!
