Recipe for Coconut, Banana & Blueberry Muffins (gf,df)

These easy to make muffins are not only delicious, but addictive as well. Once you have all the ingredients, it is so tempting to make them every weekend!

This recipe makes approx 12 (small) muffins and is inspired by Goodies & Grains, a local health food shop in Adelaide that really cares about providing their customers with quality food.


1/2 cup coconut flour
1 cup almond meal
1/2 cup Tapioca flour
1 ripe banana (mashed)
1 cup frozen blueberries
1/3 cup maple syrup (or 1/2 cup if you prefer it sweet!)
1/3 cup coconut oil
1/2 cup  coconut milk
3 whole organic eggs
2 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp baking powder
Shredded coconut (for garnish)


Preheat oven to 180°C.

In a large bowl, mix together the dry ingredients, plus the mashed banana.

In a second bowl, whisk together the liquid ingredients.

Combine wet & dry ingredients & fold together.

Once all ingredients are combined, gently fold in the frozen blueberries

Oil a muffin tray & pour in the muffin batter.

Bake for 20 mins, or until the muffins are set in the middle & golden on top.

When ready, take muffins out of the oven & leave for a few minutes, before turning out & letting cool on a wire rack.

Top with shredded coconut
